Woodfired Ovens are becoming the back yard barbeque of the new millenium. That's because they can do everything a BBQ can do, better and more efficiently. The added advantage of a woodfired oven is, of course, that you can bake amazing bread, you can slow cook anything from vegetables to meats, and you can use them for dehydrating seasonal fruits and vegetables. In fact, you can use them in so many ways that they become a part of your kitchen, often on a daily basis.
A well made woodfired oven has been designed to be efficient and long lasting. While it is possible to buy a cheap woodfired oven from a hardware store these days, you will find that these are made to a price. They usually have a small oven chamber which does not accommodate enough for a family get together, and will use a lot of firewood to do the job. Once they live outside in the elements for an extended period, they are prone to rust. They wear quickly in places where heat accumulates, especially at the outlet of the firebox.
I have worked extensively with Craig Miller of Aromatic Embers to design woodfired ovens which do the job well. As a baker, I was interested in creating ovens to make exceptional sole baked bread, as well as to handle everyday roasting and baking easily and efficiently. Craig and I have collaborated on a number of ovens now - from smaller caterer's ovens to full sized bakery ovens. Craig's knowledge of materials and high standards of craftmanship has been proven to me in the ovens I have tested - and I have learned a great deal from this experience over the past few years.
